Meatless Monday

Today was a beautiful day.  I didn't know what to make for dinner.  I found a bag of salad shrimp in the freezer and remembered I had bought flour torillas last week.  WaLa!  Why not shrimp tacos?  Never made them before so I experimented.
I sauteed 1/2 onion in olive oil in skillet.
Added the shrimp.  Let them simmer
Added some cajun spice about 1 1/2 tsp, and 1 tsp cayenne pepper.
Cut up a tomato, shredded some cheese, shredded some lettuce, and pulled out the sour cream.
Heated the tortilla in a skillet, filled them with the shrimp mixture and topped them with the condiments. 
Served it with black beans and rice on the side.  What a delicious, quick dinner my husband loved.
I'm getting so good with quick meals.  I forget to plan ahead sometimes and have to improvise... 

what a busy weekend!

Had guests over this weekend and served this refreshing Cran-Raspberry Mousse dessert.  Easy and actually tastes like cranberry jello!   Served them in stem glasses to make them look classier then they were!
Enjoyed by all. 
Graduation parties are plentiful this month.  Congratulations to anyone who has a graduate.

Goodies for the Workshop!



Wednesday night my husband Fred did a workshop in Past Life Regression and I provided the refreshments.  It was a nice evening.  I provided homemade chocolate chocolate chip cookies, peanut butter cookies, tortilla rollups of various kinds and crabmeat dip with crackers.   The people who attended really seemed to appreciate the goody table and I enjoyed making all the food!  I can't wait until the next one next Wednesday.  Maybe I'll make some different kinds of things.
This was the final video submitted for the Real Women of  Philadelphia.  I'm such a woman!

A great night for chicken soup!

OK, so it's June 23 and it's about 50 degrees and rainy outside!  This is great soup weather.  My husband requested chicken soup so I had chicken in the freezer and thought I'd make some.  I made the most delicious chicken dumpling soup that my sister Mary gave me the recipe for.  WOW!  It was fantastic.  I didn't take a picture of it, probably because we ate it so fast, but it was wonderful.
Cooked the chicken in water, peeled the meat off the bones.  Cooked it again in chicken stock added to the chicken water along with onions, carrots and celery.   When the veggies were cooked soft,  I added about 1/2 cup of the thinnest noodles I could find, they sort of actually dissolve and make the soup thicker.  Last, the delicious dumplings.  Bisquick and milk!  Drop dumplings in the soup and boy oh boy, you have the most delicious soup you ever would want to eat!!    Thank you my dear sister Mary for your great recipe.  You are my mentor when it comes to cooking...  Love you.

Peachy Keen night!

Had a great supper with my husband tonight.  Shrimp Creole with brown rice and vegetables.  For dessert,  Peach jello salad.  It's called a salad, but its a great dessert.  Light and refreshing.    I've made it with strawberry and bananas - but the peach seems much lighter.  YUMM

Friday Night Dinner Party

Last night I made a dinner that turned out fabulous.  My guests really enjoyed it and I have to admit, so did I!
Sometimes things don't turn out the way you want them to and some dinners can be a disaster, but last night it all went according to plan!
I made my fried ravioli as appetizer while we had drinks.  I made three kinds.  Filled with spinach, crabmeat and smoked mozarella cheese.  I did put a picture of the fried favioli in this blog, a while back.
Next came salad.  I made an antipasto salad consisting of lettuce and a beautiful array of meats and vegetables along with White Balsamic Vinegrette dressing.
OK,  main course.  Timbale - an Italian pasta dish baked in a "crust" of grilled eggplant.  It was marvelous! and it came out of the springform pan without a hitch!  Served it with Italian Sausage grilled with tomatoes.  Wow,  it was quite a dinner! 
For dessert, I made a 9" chocolate layer cake.  Filled with Nutella spread, strawberries and Chocolate whipped cream filling.  Finished the cake with the chocolate cream filling as a frosting and topped with chocolate dipped strawberries.  Served ice cold.  Great! 
I'm posting pictures of the Timbale and the Chocolate cake.  It was a wonderful dinner party!

Sunday night chili!

Had an overwhelming taste today for chili.  Ever get that way?  I loaded it with shredded cheese, sour cream and lots of onions.  Oh,  don't forget the oyster crackers.   Mmmmmmm!  A good waya to end a week...

Friday Night special: Tuna & Peas over Whole Wheat Spaghetti

What to cook tonight??  Been busy all day cleaning and rearranging furniture.  Don't have many supplies in the house....Oh well when all else fails cook PASTA!  My mother used to make this dish for us when we were growing up, only I added the peas to the mix and the wine in the sauce.  My husband loves this dish and was really happy when I told him I would make it.  It turned out delicious!  Thanks Mom!!
