Easter's gone, on to Mothers Day----

Well, Easter was fun,  and now it's over!  Things seem to go by much faster these days.  Made interesting desserts to bring to my friends house.  Double layer pineapple upside down cake with cream cheese frosting.  Picture below.  It was absolutely delicious!  Also, made chocolate cake cups filled with chocolate mousse topped with a chocolate hazelnut egg.  Everybody was wonderfully impressed.  Even though we were all so full from a wonderful dinner.  Everyone saved room for dessert!   I love to make desserts.  What am I saying,  I love to cook and bake and love to make desserts!  I think I'll make some type of fish for dinner tonight.  Tilapia maybe with parmesian crust??  Sounds good.  Talk to you later.

Baking for Easter.

Can't wait for the Easter bunny to come to my house this year.  I've discovered a new type of pan in the store that actually makes an upsidedown cupcake.  I guess you could call it a cakecup!  I tried them the other day and wow,  they are great.  I made chocolate cups, dipped the rim into chocolate frosting, and filled them with chocolate mousse (chocolate pudding with cool whip).  My goodness, they were fabulous.
I'm going to make more to bring to my friend tomorrow and I thought of making chocolate/chocolate, yellow/strawberry and maybe something with white cake.  Not sure what yet.  I will bake today and come back later with the finished product picture for you to see.  Have a great day.

Asparagus - the springtime veggie!

I made one of my mothers favorite things today.  She used to make asparagus fritata when I was a kid and of course we took it for granted.  Now, almost every chef on tv makes some sort of Italian frittata.  Eggs beaten with a little water or cream, grated parmesian or romano cheese, garlic, salt, pepper and cut up cooked asparagus.  Fried in frying pan or baked in pie dish,   mmmmmmm good.  Made some today.  Great for a snack or breakfast....try it, you'll like it!

New Recipe for Pear Pecan Salad

Hello again,  a new video is now available on youtube.  A new salad I came up with.  Pear Pecan Salad.  It is so simple to make and is so delicious.  You can see my husband Fred eating it and enjoying it.  Bibb lettuce, craisins, grape tomatoes, pears,  balsamic vinegrette dressing.  You don't have to go to a restaurant to get a good salad.  Make it at home.  Cheaper and better.  Hope you will view my video http://www.youtube.com/ and make this springtime salad.  Talk to you soon......

New Recipes

Well hello again.  It has been a while since I wrote on this blog.  I have been busy cooking and did a few more videos of appetizer, side dish and entre.  I think they are all very, very good.  Go to http://www.youtube.com/ and type in Pat Kutchins Kitchen to see them.  There are six in all so far.  Tomorrow I am adding Mac & Cheese with Chicken and Cauliflower.  Sounds like a lot going on in this dish,  but it's just kicking up the old stand by of mac and cheese.  It's been a wierd spring here in Lake Zurich, IL.  One day nice,  the next day cold and gloomy, and then the next day nice again.  We'll probably go right into summer and not have much of a spring. 

I'm preparing for Easter and have orders for cheesecakes so I will be baking and baking this week.  If I don't get back to this blog,  don't worry I will soon... bye now...

Saturday Night Treat!

Well what's for dinner tonight?  Didn't go grocery shopping for the week yet,  so lets see what we have on hand.   2 heads of fresh cauliflower,  about 1 cup of heavy cream (left over from the tiramisu), shredded colby and cheddar cheese and elbow macaroni.   Hmmmm,  ok,  I'll use up the cauliflower before it spoils, boil some elbow macaroni, and make something out of it. 

Got the cauliflower nice and soft in boiling water first.  Boiled the macaroni.  Mixed them together in a casserole dish,  added salt and pepper and granulated garlic.  Melted about 1 T butter and mixed it with the cream.  Poured it over the pasta mixture.  Loaded the whole thing with about 2 1/2 cups of shredded cheese.  Mix all and bake for about 20 minutes at 350 degrees.  Well,  I made somethng new.  Cauliflower Mac and Cheese.  Boy it was tasty...I never made this before, but I will make it again.  My husband loved it.  He said it would have been great as a side with some fish or coconut shrimp.  I think he's right.  But tonight we only indulged in this wonderful cauliflower mac and cheese casserole all by itself......
